Getting anxious

 And praising God.


We've gone from seven doors to two. 




No more confusion over which door is the front door.

And we've gone from 20+ windows to 7. Less cleaning there.

We need to air it out when we are able to finally move in so the windows will be used.

The dealer is going to replace the steps. Even if they were level they still aren't safe.

But we are getting closer.

Praise God. Thank you, Lord!

Getting closer, Mom.

 I didn't get pictures of everything, but here is what I did get.




They used this when they put the halves on the property, and they used it to move them into place on the dirt pad.




This is the back section in place and they are taking the protective plastic off.

And yes, I took these from our truck because I was cold. 

As the morning went on, they took their jackets off, but I mostly still stayed in the truck. :)


Up on the roof removing the travel, retaining boards.


These parts go back to Champion Homes, the builder. So I am curious why 

these got left behind.

We had to go into town shortly after this, so there was a bit I missed. Middle son was there in case they had questions; but they pretty much did their own thing.

No pictures of the inside until it is... polished? Still a lot to do. This crew's only job was getting it together, leveled and strapped down. Other people do other things.

I should have gotten more pictures of the outside, but we were tired.

The skirting is the last thing to be done.

Need the new septic put in. Gas and water need to be done before electric (so says the parish powers), though the gentleman who is doing a lot of the cosmetic stuff said it doesn't always have to be that way.

Most likely at least 2 more weeks before we can start moving in.

And then we need a new driveway.

All in God's time, of course. :)

My "Spring Rolls", Mom.

This is what I couldn't remember yesterday, Mom. You mentioned you didn't know spring rolls, so here is what I call spring rolls.

They aren't really even close to true spring rolls. More like a burrito, I guess. But we like them. :)

This is what I use to make the spring rolls. We use ground beef, bean sprouts, soy sauce, mushrooms and usually a shredded cojack cheese along with some sort of spring or egg roll wrap. 



I used to use garlic also, but as you know youngest son has digestive issues. Fresh garlic is bad for him so to get the flavor, I use a bit of garlic powder. For some reason, the shredded cheese didn't show in the picture. And I forgot to include the cornstarch.

I cook the meat, seasoning with the garlic powder and soy sauce while it cooks.  Then I let it cool in the fridge for an hour or so. Then I mix everything together.



When that's done I open the spring roll wrap package and start filling. The cornstarch is because I use a cornstarch slurry, rather than raw egg to seal the wraps.





And roll it up. :)


I should mention we usually fry them in a frying pan. they can be baked in an oven; but they turn out different.
It was the first time I had tried this particular brand of wraps. But they turned out good and they were all eaten, so that's what matters.
Another meal blessed by God. :)

It's a start

With God's will, and no big rain, the manufactured home will be put together and finished on the 28th.

Then the gas, water, electric and new septic system have to be put in.
Praising God and praying this is his will for us. I know I am past ready for it.

So we got snow.

 Sort of. Only on rooftops. Not even on the cab of our truck bed.

And it was melted by 10 AM.



Got plenty of rain.

Next rain day, maybe next week Sunday.

Going to have beef shank for dinner. Nothing fancy. Fix it like a stew in a crock pot and let it cook all day.

I remember when shank used to be a cheap meal...

Starting to smell good!
